About the recipe – Vegetarian with an option to add chicken if desired.
After writing the Tortoise and the Hare story I started paying attention to what my next door neighbour was feeding his turtle.

Romaine lettuce

Dandelion greens

Strawberries

Blueberries

Apples.
Substitutions: You can substitute collard greens or mustard greens for the dandelion or add mix all three together. Other fruit may include pineapple or mango. Keep in mind that turtles are omnivores so if you want to add some cooked chicken or vegan substitute then go ahead.
Preparation
Wash each ingredient. Cut up or tear the greens and mix together in the bowl. Cut strawberries in half and slice the apple with the skin on into bite size pieces. Arrange fruit on top of the greens.
Dressing:
Your turtle may not want dressing but you probably do. Try the following dressing which adds a bitter contrast to the sweetness of the fruit. Mix virgin olive oil, organic raw apple cider vinegar, a splash of lime juice, fennel seeds and ground cardamom. Let sit for a bit to let the flavours have a conversation, then pour over the salad. Proportions to personal preference so taste as you go.
